Red Wagyu, also known as Akaushi cattle. 

This premium Japanese breed is gaining attention among foodies and home cooks alike, and for good reason. While it may not yet be common on every marketplace, its rich history and superior qualities make it worth seeking out.

Akaushi cattle, colloquially called Red Wagyu or Japanese Red, originate from Kumamoto, Japan. For centuries, Japanese ranchers selectively bred these cattle for balance, consistency, and exceptional meat quality. 

Akaushi is one of the four main Wagyu breeds—all Wagyu are Japanese cattle, but not all Wagyu are Akaushi. 

This distinct red breed earned a reputation as the “Emperor’s Breed” thanks to its intense marbling and buttery flavor. The breed remained exclusive to Japan until the mid-1990s, when a small herd of seedstock was exported to Texas. 

These foundational animals helped establish American Akaushi herds. 

Today, operations like Desert Mountain cattle raise descendants of these imports. Their cattle are DNA-verified to be half Akaushi, blending the best traits for outstanding beef.

What sets Red Wagyu apart?


Its genetics promote remarkable intramuscular marbling—that beautiful web of fat within the muscle. This creates a melt-in-your-mouth texture far superior to conventional beef. 

The fat profile is rich in monounsaturated fats, including high levels of oleic acid (the same healthy fat found in olive oil). This contributes to a rich, buttery, umami-packed flavor while offering potential heart-health benefits compared to higher saturated fat meats.

Akaushi beef is often described as sweeter and more balanced than black Wagyu, with excellent tenderness due to finer muscle fibers and higher marbling. It excels in both grain-finished and grass-fed systems. 

Breeds like those at Desert Mountain thrive on pasture, producing 100% grass-fed and finished beef that’s sustainable and flavorful. Ranchers also praise Akaushi for hardiness, longevity, fertility, and efficient growth with less external fat and larger ribeyes—translating to better yield and quality grades.

In the kitchen, Red Wagyu shines whether grilled as steaks, seared as ribeyes, or slow-cooked. The marbling bastes the meat from within, keeping it juicy even at medium doneness. It’s a favorite for special occasions, date nights, or elevating everyday meals.

You might not find many (or any) sellers offering pure Red Wagyu yet—it’s still a bit of a hidden gem with strong Japanese roots—but interest is growing.
